Amaranth is a high protein sprout; higher that the cereal grains. This heirloom variety has a charming red/magenta color for microgreens.
Try as a garnish, or in salads, soups, stir-fry, fish, pasta, sandwiches.

Attractive fuchsia stems and leaves. Mild earthy flavor.
